Chicken with Herbs
Chicken With Herbs is an moderately easy dinner. Made with 2 lb. chicken, 2 tbsp. olive oil, 1 large garlic clove, 1 tbsp. lemon juice and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Rub chicken with garlic, then salt and pepper.
Throw away garlic.
Melt butter with oil in small saucepan.
Remove from heat and stir in lemon juice, parlsey and basil.
Brush chicken all over with mixture, then place skin-side down on lined broiler rack. Place under boiler for 7 to 10 minutes on each side, basting frequently with butter mixture.
After 15 minutes, test chicken for doneness by inserting skewer into thigh, if juices run clear, the bird is done.
Spoon over any remaining butter mixture.
