Chicken Parmigiana
Chicken Parmigiana is an moderately easy dinner. Made with 3 chicken breasts (12 oz.), split, boned and skinned, 2 slightly beaten eggs, 1 tsp. salt, 1 c. dried bread crumbs and 2 c. tomato sauce, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Put chicken breasts on board and pound until thin.
Combine eggs, salt and pepper.
Dip chicken in egg mixture.
Heat oil in frying pan until very hot.
Quickly brown chicken (both sides). Remove to shallow baking dish.
Take excess oil from pan.
Stir tomato sauce, basil and garlic powder in frying pan.
Heat until boiling, about 10 minutes.
Pour over chicken.
Sprinkle with Parmesan.
Cover.
Uncover and add Mozzarella cheese slices.
Bake in moderate oven until cheese is melted.
