Chicken Marsala
Chicken Marsala is an moderately easy dinner. Made with 2 whole chicken breasts, skinned, boned and halved lengthwise, 1/2 c. flour, 2 tbsp. butter, 2 tbsp. olive or vegetable oil and 2 c. sliced fresh mushrooms, this recipe delivers authentic, satisfying flavors. Place each breast half between two pieces of heavy-duty plastic wrap or waxed paper and set on a sturdy surface.
With flat side of meat mallet, pound to 1/4-inch thickness.
Remove plastic or waxed paper; dredge each piece slightly in flour.
In skillet, melt butter and oil.
Saute mushrooms over medium heat until tender.
With slotted spoon, remove from skillet.
