Chicken Fricassee
Chicken Fricassee is an moderately easy dinner. Made with 3 1/2 lb. chicken, cut up, 5 tbsp. flour, 1/2 c. chopped celery, 1/2 c. chopped parsley and 1/2 tsp. dried thyme, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Salt and pepper chicken.
Brown slowly in oil over medium heat.
Remove pieces of chicken when browned.
Stir in flour until smooth.
Cook about 15 minutes, stirring constantly, until a rich brown roux.
Lower heat.
Add onion and celery; cover and simmer about 10 minutes.
Stir often.
Gradually stir in water.
Add parsley, bay leaf, thyme, chicken pieces and salt and pepper to taste.
Cover and simmer about 40 minutes.
