Chicken Fricasse
Chicken Fricasse is an moderately easy dinner. Made with 1 (3 1/2 lb.) chicken, cut up, 3 tbsp. butter, 2 tbsp. flour, 1/3 c. chopped onion and 1 clove garlic, minced, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Fry chicken in butter (use heavy skillet) for 5 minutes; add onion, garlic and tarragon sprigs.
Sprinkle with flour, stirring to distribute flour evenly.
Add water and carrots.
Cover and cook for 20 minutes.
Remove chicken and keep warm.
Let the sauce cook down, stirring often, for about 5 minutes.
Remove tarragon; add cream, salt and pepper.
Simmer 3 minutes.
Stir in chopped tarragon and serve with rice.
