Chicken Dijon
Chicken Dijon is an moderately easy dinner. Made with 2 whole chicken breasts, split, boned and skinned, 2 tbsp. butter or margarine, salt and pepper, 2 tbsp. lemon juice and 1/4 c. whipping cream, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Place chicken between waxed paper and pound until 1/8-inch thick.
Melt butter in frying pan; add chicken and cook uncovered over medium-high heat until lightly browned.
Sprinkle with salt and pepper.
Add lemon juice and stir gently.
Remove chicken with slotted spoon to serving dish and keep warm.
Return frying pan to high heat and add cream and mustard.
Boil rapidly, uncovered, stirring until large shiny bubbles form.
Drain any juice from chicken into sauce.
Spoon sauce over chicken and serve with buttered noodles or rice.
