Chicken Dijon
Chicken Dijon is an easy dinner. Made with 4 boneless, skinless chicken breast halves (4 oz. each), 1 tbsp. dijon mustard, 4 slices fat-free processed swiss cheese sandwich slices, 2 egg whites, lightly beaten and 1/2 c. pkg. seasoned bread crumbs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Pound chicken pieces until very thin and double in size. Spread with Dijon and top with a slice of Swiss cheese.
Roll up chicken with inside and secure with a toothpick.
Dip into egg whites and roll in crumbs.
Brown briefly in sprayed nonstick pan. Place in an ovenproof dish.
Cover and bake 30 minutes at 350Β°. Serves 4.
