Chicken Cordon Bleu
Chicken Cordon Bleu is an moderately easy dinner. Made with 6 large half chicken breasts, skinned and boned, 6 thin cooked ham slices, 6 slices swiss or parmesan cheese, 1/2 c. flour and 2 eggs, well beaten, this recipe delivers authentic, satisfying flavors. Place chicken breasts between 2 pieces of wax paper.
Pound to 1/4-inch.
Sprinkle with salt and pepper.
Place a slice of ham and a slice of cheese on 1/2 of chicken breast. Fold over the other 1/2 of chicken breast.
Pinch and pound edges to seal.
Dip in flour, then egg, then crumbs. Place cutlets on wax paper and refrigerate for 1 hour.
Heat oil and butter.
Saute cutlets, turning frequently, for 10 minutes, until cheese melts.
