Chicken Breasts Primavera
Chicken Breasts Primavera is an moderately easy dinner. Made with 6 chicken breast halves, skinned, boned and slightly flattened, salt and pepper, red pepper strips, 1 c. frozen cut green beans or asparagus and 1 (6 oz.) pkg. frozen snow peas, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Heat oven to 400Β°.
Have a jelly roll pan ready.
Tear six 14 x 12-inch strips of foil.
Lightly coat 1 side with vegetable spray or oil.
Place chicken breast half on each piece. Sprinkle with salt and pepper. Top with some of the pepper strips, green beans (or asparagus), snow peas and green onions.
Dot with margarine; sprinkle with cheese.
Fold foil and seal securely. Arrange packets on ungreased baking sheet. Bake 18 to 20 minutes until chicken is done.
Remove packets to plates.
Serve with green salad, crusty Italian bread, ice cream and peaches.
