Cheesy Vegetable Chowder is an impressive dinner. Made with 1/2 c. chopped onion, 1 clove garlic, minced, 1 c. sliced celery, 3/4 c. sliced carrots and 1 c. cubed potatoes (raw), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Combine first 6 ingredients; bring to boil.
Cover.
Reduce heat and simmer 15 to 20 minutes or until potatoes are tender. Stir in corn; remove from heat.
Melt butter in heavy saucepan over low heat.
Add flour and stir until smooth.
Cook 1 minute, stirring constantly until thick and bubbly.
Add cheese and cook until cheese melts, stirring constantly.
Gradually stir cheese mixture into vegetable mixture.
