Cheese Soufflé

Melt butter in saucepan over low heat. Blend in flour. Add milk and cook, stirring constantly, until mixture is thick. Blend seasonings and cheese. Stir until cheese melts. Stir a little hot mixture into beaten egg yolks.
Add to cheese sauce.
Beat egg whites with cream of tartar until soft peaks form.
Carefully fold into cheese sauce.
Pour into ungreased 1 1/2 quart casserole or soufflé dish.
Set in pan containing at least inch hot water.
Bake at 350° for 50 to 60 minutes. Serve hot.
For stronger cheese flavor, increase to 2 cups cheese.
