Cauliflower-Vegetable Casserole
Cauliflower-Vegetable Casserole is an moderately easy dinner. Made with 1 large head cauliflower, 1 c. sliced fresh mushrooms, 1 c. sliced carrots or peas, 1/4 c. diced green pepper and 1/4 c. diced sweet red pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Wash cauliflower and break into flowerets.
Place all vegetables in a 2-quart covered casserole.
Melt the margarine in saucepan.
Add flour and stir.
Add the milk and cook until thickened. Remove from heat and add cheese and stir until melted. Pour over the vegetables. Cover and bake at 325Β° for about 45 minutes.
Serves 6 to 8.
