Cauliflower Au Gratin
Cauliflower Au Gratin is an moderately easy dinner. Made with cauliflower, salt, 1 1/2 c. cream sauce, 1/4 tsp. mace or nutmeg and 1/2 lb. sharp cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Remove stalks and outer leaves of cauliflower.
Separate into flowerets, then soak head down in salted water, 2 tablespoons salt to 1 quart of water, for 1/2 hour.
For a medium-size head, make 1 1/2 cups cream sauce.
Add to this the mace or nutmeg.
Cook cauliflower (do not overcook).
Drain; season.
Grate cheese.
Top with buttered crumbs and dot with butter.
Bake at 375Β° for 35 minutes, or until slightly browned.
