Catfish with Crunch Rice Salad
Catfish With Crunch Rice Salad is an moderately easy dinner. Made with 2 tbsp. soy sauce, 4 tbsp. olive oil, 1/2 tsp. coarse black pepper, 4 (4 oz.) catfish fillets and 1 c. uncooked 10 minute brown rice, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Mix soy sauce, 1 tablespoon olive oil and 1/4 teaspoon pepper in large zipper type food storage bag until blended.
Add fillets. Turn to coat.
Let marinate while preparing salad.

Cut tomatoes in small chunks.
Peel, seed and dice cucumber.
