Cashew Beef with Snowpeas
Cashew Beef With Snowpeas is an moderately easy dinner. Made with 2 t vegetable oil, 6-7 c beef stock (canned or homemade), 2-3 lbs lean beef or sirloin tips, cubed, 1/2 c soy sauce and 1 c celery, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Brown cubed beef in the oil in a large casserole or dutch oven.
Add soy sauce and broth and bring to a boil.
Reduce heat and simmer covered for 20-30 minutes.
If you like a thicker sauce, mix 1/2 cup cornstarch to 1/3 cup cold water and stir into beef, cook for about 5 minutes.
Meanwhile, in a large skillet over medium heat, melt 1/4 cup butter and add celery, pepper, onion and carrots, cook until vegetables are tender.
Add snowpeas and warm through-add vegetables to the beef mixture.
Serve over fried rice topped with 1 cup sliced, toasted cashews.
