California Vegetable Quiche
California Vegetable Quiche is an moderately easy dinner. Made with 1 lb. summer squash (about 3 c.), 4 eggs, well beaten, 1 tsp. dill, basil, oregano or tarragon, 1 to 1 1/2 tsp. salt and 2 c. grated monterey jack cheese, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Grate squash coarsely into bowl.
Sprinkle with salt and let stand 10 minutes.
Squeeze out all liquid.
Preheat oven to 350Β°. In a large mixing bowl, combine squash, eggs, cheese and seasonings.
Pour into 8-inch square baking dish and top with Parmesan cheese.
Bake 30 to 40 minutes or until set.
Knife inserted at outer edge comes out clean.
