Broiled Fish

Pat fish dry with paper towels.
Combine cornmeal, flour, paprika, salt and pepper in a flat dish.
Place oil in baking dish.
Heat in 425° oven 1 minute.
Dredge fish in cornmeal mixture; shake off excess.
Arrange fish pieces 1 inch apart. Sprinkle with Parmesan cheese.
Bake at 425°, allowing 10 minutes per inch thickness or until fish flakes when tested with a fork. Yields 4 servings.
