Broccoli-Buttermilk Soup
Broccoli-Buttermilk Soup is an easy dinner. Made with 1 medium stalk broccoli (9 to 12 oz.), chopped, 1 red onion, chopped, 2 cloves garlic, chopped, 1 shallot, chopped and 2 c. buttermilk, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine the broccoli, onion, garlic and shallot in steamer basket and steam over boiling water until broccoli is tender, about 12 minutes.
Transfer vegetables to a food processor or blender and blend until pureed.
Then with the motor running, slowly pour in the buttermilk.
Don't overprocess the soup or it will be too frothy.
