Breaded Tomato Slices
Breaded Tomato Slices is an moderately easy dinner. Made with 2 eggs, beaten, 1 tbsp. milk, 1/4 tsp. seasoned salt, 4 tomatoes (medium firm) and 1 c. finely crushed saltine crackers (about 28 crackers), this recipe delivers authentic, satisfying flavors. Combine eggs, milk, seasoned salt and dash of pepper.
Cut tomatoes into 3/4-inch thick slices.
Dip in cracker crumbs, then in egg mixture.
Dip again in crumbs.
In skillet, fry in hot oil until browned on both sides.
Sprinkle with cheese.
Cover; cook over very low heat until cheese is nearly melted.
