Bread and Butter Pickles
A summer canning classic of crisp cucumbers and onions in a sweet-tangy turmeric-and-mustard-seed brine. The pickle for burgers and tuna sandwiches.

Select crisp, fresh cucumbers; wash, but do not pare them. Slice crosswise in paper-thin slices.
Slice the onions thin and cut the peppers into fine shreds.
Mix the salt with the vegetables and bury pieces of cracked ice in the mixture.
Cover with a weighted lid and let stand 3 hours; drain thoroughly.
