Bread and Butter Pickles
Bread And Butter Pickles is an moderately easy dinner. Made with 6 qt. medium size cucumbers, 3/4 c. salt, 2 c. water, 1 qt. vinegar and 6 medium size white onions, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Wash cucumbers.
Slice onions and cucumbers thinly.
Arrange in layers in earthenware crock or bowl.
Sprinkle each layer with salt.
Cover; let stand 3 hours.
Drain off accumulated juice. Combine water, vinegar, sugar, celery and mustard seed.
Bring to boil, stirring until sugar is dissolved, 3 minutes.
Add cucumber mixture and bring to boiling point once more but do not boil.
Pack in hot sterile jars, seal.
Makes about 8 pints.
