Bread and Butter Pickles
Bread And Butter Pickles is an moderately easy dinner. Made with 4 qt. medium cucumbers, unpeeled, 1-1/2 c. onion, sliced, 2 large garlic cloves, 1/3 c. pure salt and 1 or 2 qt. crushed or cube ice, this recipe delivers authentic, satisfying flavors. Wash cucumbers thoroughly, drain.
Slice into 1/8 inch to 1/4 inch slices.
Add onions, garlic and salt to cucumbers, cover with ice, mix well and allow to stand for 3 hours.
Drain thoroughly and remove garlic.
Combine sugar, spices and vinegar, heat just to a boil.
Add cucumbers and onion slices and heat 5 minutes.
Pack loosely into clean, hot pint-sized canning jars.
Adjust lids and process in boiling water bath canner for 5 minutes.
Yield: 7 pints.
