Before serving, in large roaster or stock pot, soak ham overnight in enough cold water to cover.

In the morning remove ham, place in sink and scrub with a brush under running water cleaned of any cleaning debris. Wash roaster, and cover it with water.

Add vinegar and 1 cup of brown sugar to ham water and bring boil, immediately reducing heat to low.

Simmer 20 minutes pound for older ham, 15 to 18 minutes for quick-aged until the small bone in hock can be pulled out with the fingers.

Let cool in cooking water overnight.
