Black Bean and Rice Bake
Black Bean And Rice Bake is an moderately easy dinner. Made with 2 tsp. olive oil, 1 1/2 c. chopped onion, 3 garlic cloves, minced, 1/2 c. chopped red bell pepper and 1 (4 oz.) can diced green chiles, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Preheat
Heat oil heavy, large, nonstick skillet medium onion and garlic; saute 8 to 10 minutes until tender.
Add bell pepper; saute 3 minutes.
Stir in tomatoes, lime juice, chili powder and salt; bring to a boil.
In a 2-quart casserole, mix beans and rice. Pour in tomato mixture and stir to combine.
Sprinkle casserole with cheese.
Bake 10 to 15 minutes until hot and bubbly. Healthy. Makes 4 servings.
