Beet Salad(Insalata Barbabietola)
Beet Salad(Insalata Barbabietola) is an moderately easy dinner. Made with 6 medium beets, 1 medium onion, sliced, 1/2 tsp. whole cloves, 3 hard-boiled eggs, peeled (optional) and 1/4 c. olive oil, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Cut off all but 2 inches of beet tops.
Cut root end to 1-inch on bottom of beets.
On baking pan, lined with foil and bake for 1 to make sure they are tender; if not, return oven for a little longer. When beets are cooked, into 1/4-inch thick slices or wedges and glass bowl with onions. Add eggs to beets, if desired.
Of ingredients and pour over beets.
Let marinate at least 5 hours.
Makes 3 to 4 servings. These will last up to 2 weeks in refrigerator.
