Beef Stroganoff
Beef Stroganoff is an moderately easy dinner. Made with 1 lb. fillet of beef, 1-inch thick, 1 c. chopped onion, 1/2 lb. mushrooms, sliced, 1 c. beef broth and 2 tbsp. tomato paste, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cut beef across grain into 1/4-inch slices.
Cut slices to make 2 x 1-inch pieces.
Sprinkle with pepper.
Sear meat in 2 tablespoons hot oil over medium-high heat, until browned; remove beef.
Saute onion until tender.
Add mushrooms; continue cooking until tender.
Add broth and tomato paste; stir until smooth. Blend in sour cream.
Add beef, along with any juices in bowl and parsley.
Bring sauce to a simmer; cook 5 minutes or until meat is heated through and sauce thickens.
Serve with noodles.
