Beef Chiliquillas
Beef Chiliquillas is an moderately easy dinner. Made with 6 tortillas, 1 lb. lean ground beef, 1 (6 oz.) can tomato paste, 1 can chilies and tomatoes and 2 onions, chopped and divided, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Preheat oven to 300°.
Bake tortillas until crisp, about 10 to 12 minutes.
Increase oven heat to 350°.
Brown meat in a frying pan; drain off any fat and add tomato paste, chilies and tomatoes, half the chopped onion and cayenne pepper.
Simmer 10 to 15 minutes.
Layer beef mixture, broken tortillas, remaining onion and cheese three times, in that order, in a 2-quart casserole. Cover and bake 30 minutes.
Serve with lettuce, tomato and salsa, if desired.
Good with refried beans and fresh corn-on-the-cob.
