Barley and Mushroom Bake
Barley And Mushroom Bake is an moderately easy dinner. Made with 1 tbsp. olive oil, 2 c. sliced mushrooms, 2 c. chopped onion, 1 c. barley, uncooked and 2 1/2 c. hot water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Add olive oil in large skillet.
Saute onions and mushrooms until tender.
Add barley and saute 4 minutes or until barley is lightly browned. Pour into 1 1/2-quart baking dish, sprayed with vegetable cooking spray.
Add water, bouillon and pepper. Bake at 350Β° for 1 hour and 15 minutes.
Gently stir in parsley.
Yields 8 servings.
