Banana Meringue Pie
Banana Meringue Pie is an moderately easy dinner. Made with 2/3 c. sugar, 1/4 c. cornstarch, 1/2 tsp. salt, 3 eggs, separated and 1 1/2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine 2/3 cup sugar, cornstarch and salt in top of double boiler.
Gradually stir in milk.
Cook over boiling water, stirring constantly, until mixture thickens.
Beat egg yolks using fork; stir a small amount of hot mixture into egg yolks. Immediately pour yolk mixture into remaining hot mixture, blending thoroughly.
Cook 2 more minutes, stirring constantly.
Remove from heat.
Gently stir in vanilla.
Let mix cool while preparing meringue.
