Baked Eggplant
Baked Eggplant is an moderately easy dinner. Made with 1 large eggplant, 1/2 lb. bread crumbs, 1 c. milk, 2 eggs and 1/2 tsp. sage, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Peel and slice the eggplant.
Soak in salted water in refrigerator several hours or overnight.
Soak bread crumbs in milk.
Add eggs, sage, salt and pepper.
Sauté green pepper, celery, onion and jalapeño in butter until tender.
Boil eggplant (large cubes) until almost tender; drain.
Add bread mixture and sauteed vegetables; blend.
Place in greased casserole.
Top with grated cheese.
Bake at 350° until brown.
