Asparagus Vinaigrette
Asparagus Vinaigrette is an moderately easy dinner. Made with 1 lb. fresh asparagus, 1/3 c. tarragon wine or white wine vinegar, 1 tbsp. lemon juice, 1 tbsp. chopped green onions and 1 clove garlic, pressed, this recipe delivers authentic, satisfying flavors. Snap off tough ends of asparagus.
Remove scales with a vegetable peeler or knife, if desired.
Cook asparagus, covered, in boiling water 5 minutes.
Drain and place in a shallow dish. Combine vinegar and next 6 ingredients; pour over asparagus. Cover and chill 8 hours.
Remove from marinade and, if desired, serve in "bundles" in lemon rind rings.
