Arizona Mountain Soup
Arizona Mountain Soup is an moderately easy dinner. Made with 1 1/4 c. dry pinto beans, 1 tbsp. oil, 2 medium onions, chopped, 2 cloves garlic, chopped and 1 (16 oz.) can tomatoes, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Rinse beans.
Combine beans with 3 cups water.
Bring to boil. Reduce heat and simmer 2 minutes.
Let stand or cover and let stand overnight.
Drain; add 5 1/2 cups fresh water to beans. Simmer, covered, for 1 hour.
Cook onion and garlic in oil until tender.
Stir in tomatoes, rice, salt, paprika and pepper.
Stir into beans.
Bring to boiling.
Cover and simmer 45 minutes to 1 hour or until rice and beans are done, stirring occasionally. Will be thick.
Makes 8 servings.
