Stir in lemon juice.

Cook on medium heat until mixture thickens and registers 212Β° on a candy thermometer (takes about 2 minutes).

Stir frequently to prevent sticking.

Ladle hot filling into hot jars.

Process in hot water bath for 25 minutes or pressure canner at 5 pounds pressure for 8 minutes.

Makes 6 quarts.

One quart filling makes 1 (8 or 9-inch) pie.
