Almond Roca
Almond Roca is an easy dinner. Made with 2 c. butter (margarine will work, but not as well), 2 2/3 c. sugar, 2 tbsp. light corn syrup, 2 c. almonds, toasted and chopped and 1 1/2 c. chocolate chips, melted, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Toast almonds in the oven (or we use the microwave) until lightly toasted.
Boil butter, sugar, corn syrup and water to 300°, stirring constantly (it takes a really long time), so the mixture doesn't stick to the bottom of the pan and burn.
When mixture reaches 300°, add chopped almonds.
Pour into greased cookie sheet. Melt chocolate over double boiler or in the microwave.
When candy has hardened, pour chocolate over all and sprinkle with some finely chopped almonds.
When cool, break into pieces.
