Zucchini Treat
Zucchini Treat is an moderately easy dinner. Made with 3 lb. zucchini, 5 large eggs, salt and pepper to taste, 1/4 tsp. seasoned salt and 1/4 c. parmesan cheese, grated, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Wash and cut zucchini in quarters and cook in boiling slightly salted water until done.
Don't over cook.
Drain well, let cool, cut in small pieces and slightly squeeze out excess water.
Place in a large bowl, add beaten eggs and all other ingredients.
Mix very well.
Oil bottom of 9 x 12-inch pan.
Sprinkle some bread crumbs and smooth out.
Spread mixture on crumbs.
Sprinkle a few more crumbs and Parmesan cheese on top of mixture and bake in 350Β° oven about 50 minutes or until brown on top.
Can be served warm or can be cut in 2-inch squares when cold and served as hors d'oeuvres.
