Zucchini-Squash-Tomato Casserole
Zucchini-Squash-Tomato Casserole is an moderately easy dinner. Made with 2 yellow squash, 2 green zucchini, 1 tbsp. olive oil, 1/2 c. chopped onion and 3 or 4 chopped garlic cloves, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Slice and saute in olive oil with chopped onion and chopped garlic cloves.
Cook fast (not more than 5 minutes), stirring and shaking.
Put in casserole dish; pat down (even out).
Cover with thinly sliced tomatoes and sprinkle with Parmesan cheese. Sprinkle with 2 tablespoons fresh basil or parsley.
Pour on 1 tablespoon olive oil.
Put under broiler 3 to 4 minutes or until light brown.
