Zucchini Soup
Zucchini Soup is an moderately easy dinner. Made with 1 lb. cleaned unpeeled zucchini, 1 3/4 c. chicken broth or 3 cubes, 2 tbsp. shallots, onions or leeks, 1 clove garlic, minced and 2 tbsp. butter, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Chop unpeeled zucchini, shallots and garlic.
Put all three in heavy frying pan.
Cook for 10 to 20 minutes.
(Stir to keep from burning; you don't want to brown.)
Put all ingredients in blender and blend.
Add cream.
Serve hot with croutons or cold with chives.
Serves 6 to 8.
