Zucchini Relish
Zucchini Relish is an moderately easy dinner. Made with 10 c. zucchini, 2 red bell peppers, 2 green bell peppers, 4 c. onions, chopped and 5 tbsp. salt (canning), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Grind zucchini to make 10 cups.
Combine with ground peppers and onions.
Sprinkle salt over vegetables.
Let stand overnight in fridge.
The next morning, rinse in cold water; press out.
Add turmeric, nutmeg, celery, pepper, cornstarch, vinegar and sugar to vegetables.
Cook gently 20 to 30 minutes.
Pour into hot sterilized jars and seal immediately.
Put in water bath to seal lid for 30 minutes.
Makes 8 pints.
