Zucchini Fruit Bread
Zucchini Fruit Bread is an impressive dinner. Made with 2 c. shredded zucchini, 1 tbsp. orange juice, 3/4 c. sugar, 1/2 c. oil and 1 egg, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cream sugar, oil, egg and vanilla; mix well.
Grate zucchini. Combine with orange juice and peel; set aside.
Combine all dry ingredients and blend with creamed mixture.
Fold in zucchini mixture, nuts, dates and raisins.
Pour into Bundt pan that has been well-greased and floured.
Bake in preheated 325Β° oven for 1 hour and 15 minutes or until toothpick inserted near center comes out clean.
Wrap in foil, when cool, to keep moist.
This freezes well.
