Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 5 to 6 medium zucchini squash, washed and sliced, 1 c. fine dry bread crumbs, 2 eggs, beaten, 1/4 tsp. pepper and 1 medium onion, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook squash in salted water until tender; drain.
Saute onion in butter.
Combine with squash; add bread crumbs, pimento and beaten eggs.
Season with salt and pepper.
Turn into a buttered 2-quart glass baking dish and sprinkle with crushed crackers. Bake at 350Β° for 30 minutes.
