Zesty Salmon Loaf
Zesty Salmon Loaf is an moderately easy dinner. Made with 1 c. chopped bell pepper, 3/4 c. chopped onion, 2 (14 3/4 oz.) cans salmon, drained and skin removed, 1 c. flake-type cereal, lightly crushed (such as corn flakes) and 1/2 c. old fashioned rolled oats, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Heat oven to 375Β°.
Spray an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with cooking spray.
Spray a 10-inch nonstick skillet with cooking spray.
Set over medium-low heat.
Add pepper and onion. Cook about 6 minutes, stirring occasionally until vegetables are softened.
Using slotted spoon, remove vegetables to bowl.
Let cool slightly.
To bowl add salmon, cereal, oats, eggs, ketchup, lemon juice, mustard and horseradish.
