Wisconsin Cheese Soup
Wisconsin Cheese Soup is an moderately easy dinner. Made with 2 tbsp. butter, 1/2 c. chopped onion, 1/4 c. carrots, finely chopped, 1/4 c. celery, finely chopped and 3 potatoes, finely chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook vegetables until tender; drain.
In saucepan, melt butter.
Add onion; cook until tender.
Stir in flour; cook and stir 2 or 3 minutes until bubbly.
Stir in soda.
Gradually add milk and broth.
Bring to boil; reduce heat and simmer, stirring, until mixture thickens slightly, 10 to 15 minutes.
Add cheese and red pepper; stir until melted.
Garnish with parsley.
Makes about 4 1/2 cups.
