Wild Rice Salad
Wild Rice Salad is an moderately easy dinner. Made with 1 c. uncooked wild rice, 2 3/4 c. chicken stock, 2 3/4 c. water, 1 c. pecan pieces and 1 c. currants, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Rinse rice in strainer under cold water.
Combine with chicken stock and water.
Bring to boil, reduce heat and simmer, uncovered, for 35 to 45 minutes.
Rice should not be too soft. Drain.
Combine rice with remaining ingredients.
Mix well.
Let stand 2 hours.
Serve at room temperature.
