Watermelon Rind Pickle
Watermelon Rind Pickle is an moderately easy dinner. Made with 8 lb. melon rind, cut into 1-inch pieces, 10 lb. sugar, 2 qt. white vinegar, 2 sticks cinnamon and 5 drops oil of cloves, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Soak rind overnight in lime and enough water to cover.
Stir several times if possible.
Second morning, drain off lime water and rinse rind in cold water 2 or 3 times.
Cover with water and salt; bring to boil.
Boil for 20 minutes and then drain.
Make syrup of vinegar, sugar, cloves and cinnamon.
Stir well; this is not heated.
Add rind; bring to a boil.
Boil for 10 minutes.
Let stand overnight.
Next a.m., boil again for 10 minutes.
Put in hot jars and seal.
