Vegetable Soup(For Freezing) is an moderately easy dinner. Made with 1 qt. tomatoes, 1 qt. tomato juice, 3 to 4 c. carrots, sliced, 2 large onions, diced and 1 stalk celery, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In a large pot, add tomatoes, juice and carrots.
Cook until tender.
Add all other ingredients, except peas.
Bring to a boil and cook vegetables until tender.
Add peas and simmer.
May need to add more juice or water.
Flavor as desired, salt, pepper, sugar, beef or chicken bouillon. This makes a thick soup.
I freeze in serving size containers.
When opened, add beef or chicken broth if desired, water or V-8 juice.
Heat and serve.
