Tomato Chutney
Tomato Chutney is an moderately easy dinner. Made with 5 lb. tomatoes (red or yellow), 2 lb. sugar, 1/2 tsp. salt, 1 orange, thinly sliced and 1 lemon, thinly sliced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine sugar, salt, sliced orange sliced lemon.
Stir over heat until sugar dissolves. Add cinnamon ginger.
Bring to a boil; cook over low heat until thick, about 1 hour, stirring occasionally.
Remove cinnamon and ginger.
Add raisins and lemon juice and bring again to boil.
Stir in Tabasco; pour into hot pint or half-pint jars and seal at once.
Makes 3 1/2 pints.
