Tomato-Broccoli Chicken
Tomato-Broccoli Chicken is an moderately easy dinner. Made with 2 whole medium chicken breasts, skinned, boned and halved lengthwise, 1/4 c. chopped onion, 2 tbsp. butter or margarine, 1 (10 oz.) pkg. frozen cut broccoli, thawed and 1 tsp. lemon juice, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Sprinkle chicken lightly with a little salt and pepper.
Cut chicken into 1/2-inch wide strips.
In medium skillet, cook chicken and onion in butter or margarine until chicken no longer is pink.
Stir in broccoli, lemon juice, thyme, 3/4 teaspoon salt and 1/8 teaspoon pepper.
Cover and simmer 6 minutes.
Add tomatoes and simmer, covered, for 3 to 4 minutes more.
Makes 4 servings.
