Made with 1 english (seedless) cucumber, thinly sliced crosswise, 1 1/2 tsp. salt, 1 tbsp. thai green curry paste, 1/4 c. plus 1/3 c. well-stirred unsweetened coconut milk (not cream of coconut) and 4 medium, skinless and boneless chicken breast halves (about 1 1/4 lb. each), cut diagonally into 6 strips, this recipe delivers authentic, satisfying flavors.
