Texas Fresh Grapefruit Cake
Texas Fresh Grapefruit Cake is an moderately easy dinner. Made with 2/3 c. butter, softened, 1 3/4 c. sugar, 2 eggs, 3 c. sifted cake flour and 2 1/2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cream butter; gradually add sugar, beating well.
Add eggs, one at a time, beating well after each addition.
Combine flour, baking powder and salt; add to creamed mixture alternately with grapefruit juice, beginning and ending with flour.
Gradually add milk.
Stir in grapefruit rind and vanilla extract; mix well.
Pour batter into 2 greased and floured 9-inch round cake pans.
Bake at 350Β° for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans and cool completely on wire racks.
Spread Grapefruit Frosting between layers and on top and sides of cake.
