Sweet Summer Peas
Sweet Summer Peas is an moderately easy dinner. Made with 2 1/2 lb. fresh peas or 1 (20 oz.) bag frozen, 1/4 c. mayonnaise, 1 tbsp. chopped parsley, 1 tbsp. tarragon vinegar and 3/4 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Shell peas if using fresh ones (there should be about 3 cups). In 3-quart saucepan over high heat, heat 3/4 cup water to boiling; add peas and heat to boiling. Reduce heat to low, cover and simmer 3 to 5 minutes, until peas are tender.
Drain peas. Rinse under running cold water to cool.
